Show Me Your Best Monkey!

Okay, wait...what? The Wednesday afternoon cooking class had the pleasure of making super yummy banana muffins this week. During class, one child began whining like a baby for fun. And you know what that means: then the entire class chimes in. So to change gears, we asked them to show us their best monkey impression. Why? Because monkeys LOVE bananas (and we were making banana muffins after all). This recipe is really fun because kids get to mash up bananas (um, hello fun) and then the rest of the recipe only requires adding ingredients into the same bowl. In teams of three, the kids did a wonderful job of making the muffins...and of being moneys. Try the muffin recipe at home with your kids - they'll go bananas over them!

Banana Muffins (adapted from Smittenkitchen.com)

Ingredients:

3 to 4 ripe bananas, mashed

1/3 cup salted butter, melted

3/4 cup light brown sugar

1 egg, beaten

1 tsp. vanilla

1 tsp. baking soda

Pinch of salt

1 tsp. cinnamon

1/2 tsp. nutmeg

Pinch of ground cloves

1 1/2 cups all-purpose flour

Directions:

Preheat the oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla, and then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour the mixture into a muffin tin lined with paper cups. Cook for about 15 minutes, or until a toothpick comes out clean when poked in the middle of the largest muffin. Cool on a rack. Remove muffins from tin and enjoy!
